Green Eggs and Ham...

I'm a vegan, but I could not resist the pull of this recipe.  They call it Green Eggs and Ham, by chef Evan Funke.  Basically it is two toasted English muffins, topped with proscuitto (or fakin-bacon) and then two eggs fried perfectly in two tablespoons of butter.  "In a small nonstick skillet over low heat, melt two tablespoons unsalted butter; it should not froth.  Crack two eggs into the pan-the eggs shouldn't crackle or spit on contact; that would mean you heat is way too high-and cook over low heat until the whites are settled but yolks are still runny, three to four minutes.  Once the whites look soft and white, gently spoon the melted butter in the pan over the yolks until hot, about one minute."  Oh wow, best instructions for cooking perfect fried eggs I have ever heard.  Sprinkle the eggs with pepper and salt, transfer to the muffins, and top with a spoonful of pesto.  Fantastic!
